CHRISTMAS TRUFFLES
Ingredients
1 cup almond flour
3 tbsp cocoa powder
1/2 cup almond butter or creamy peanut butter
A splash of Vainilla Molina
2 tbsp agave syrup or honey
1 tbsp almond milk
1/2 cup sliced almonds
7/8 cup dark chocolate
1 tbsp coconut oil
Directions
1. In a bowl, mix almond flour, cocoa powder, almond butter, a splash of Vainilla Molina and agave syrup.
2. If mixture is too dry, gradually add almond milk until you reach a moldable consistency.
3. With your hands, form eight small cones and decorate with slivered almonds around each truffle to resemble scales of a Christmas pinecone.
4. Melt dark chocolate and coconut oil in a small bowl in microwave in 15-second intervals, stirring between each interval until completely melted.
5. Dip truffles in melted chocolate and place on a baking sheet lined with parchment paper.
